Chef Marius Varner

Born in Bucharest, Romania, Chef Marius Varner moved to the United States in 1991 when he was adopted in Massachusetts, where he spent his early years. He relocated to Michigan during grade school and grew up around Ann Arbor. His culinary journey began as a dishwasher at a local bar and grill, quickly advancing to prep cook. The rhythm, challenge, and creativity of kitchen life captivated him early on.
His natural leadership and strong work ethic led him into management, spending five years at Travis Pointe Country Club, then joining the team at Common Grill in Chelsea. It was there that he fell in love with the kitchen and met his wife, who served at the same restaurant, marking one of the most meaningful chapters of his career and life.

A move to Richmond followed, including roles at Mosaic and as an AGM for a kebab shop, deepening his appreciation for global flavors, operations, and guest experience. In 2020, he relocated to Fort Myers, Florida, as the industry faced the challenges of COVID. Seeking a new start, he attended a Luminary Hotel job fair, and Oxbow Bar and Grill became the launchpad for the next phase of his career.

Chef Marius spent nearly three years at Oxbow, helping shape the restaurant's growth and identity, then transitioned to the Silver King Coastal Kitchen team. Throughout his time with Luminary Hotel and Co., he has valued the opportunity to work alongside mentors and teammates like Chef Zach Geerson and Chef Josef Zimmerman.

What drives him today is a sense of ownership and entrepreneurship in his role as Sous Chef, constantly looking for ways to elevate the team, refine his craft, and improve the guest experience. For him, growth is never personal alone; it is shared. Every day is an opportunity to build something stronger together.
